Executive Chef Mert Duran, of Hyatt Regency Oryx Doha, talks inspiration, challenges and comfort food.

Tell us how did you foray into the culinary world? Was there a specific moment where you knew this was your calling?
My love and passion for culinary were influenced by my father. Growing up, I witnessed him cooking good food at home.
My calling started in university. I chose to become a chef when I realised the happiness and joy food provided to people. I had a professor in culinary school who taught us the importance of flavours and food scents and the warmth they can bring to others. The taste of simple recipes can remind people of their childhood or multicultural dishes can make others think of their favourite country to visit. I enjoy seeing people feel this happy when they taste each dish I create for them.

What’s the most challenging part of overseeing all the culinary operations of a hotel featuring five restaurants, inroom dining, banqueting and outside catering?
The most challenging part is to make sure that the hygiene of each and every venue is top-notch. This responsibility is on my shoulders and the entire hotel depends on me to ensure that we always keep the appropriate standards.
Being in the hospitality industry gives me the leeway of managing a diverse team and serving diverse guests, which is another challenging part. Strong communication and teamwork skills are very important. It means that I have to be able to deal with everyone’s perspectives and handle them well.
Another challenge is working long hours; as much as I enjoy my job, I only have limited time with my family.

What is comfort food for you? Which is that one dish that you perhaps go for when relaxing or late at night?
Mostly bread and cheese is my comfort, it’s light and I can eat it at home after long hours of work.
My go to when relaxing is sucuk (pronounced as sojuk) ekmek, this sandwich reminds me of my childhood, my mother used to cook this for me and my sister. Apart from its wonderful taste, it’s also sentimental for me.

Is there something in the food world you are looking to explore or learn about?
Every day is an exploration, I cannot choose what I want to explore it just goes without saying. Every type of dish from any country around the world provides never-ending learning for me. ✤
