Much More Than A Culinary Master

Joseph Yammine, Executive Chef at The Diplomatic Club, talks proud moments and life in the kitchen.

What first attracted you to life in the kitchen?
The ingredients are the first thing that draws me into the kitchen – I’m fascinated by their quality and the chemical reactions that occur when different flavours are combined. It all leads to an amazing result that I like to call ‘the magic transformation’.

With more than 30 years of experience, what has been your proudest moment and why?
After many years of cooking for all kinds of receptions, I’ve had countless proud moments. Whether it was receiving heartfelt compliments from a couple after preparing a lavish buffet for their royal wedding, being approached by a president’s protocol team asking for the recipe of a dish he enjoyed or watching my students rise in their careers and reach top positions in the industry – it all fills me with pride. Sometimes, it’s the simpler things that touch me the most: the smile of a child who finishes every bite of a meal I made or an elderly lady telling me my dish brought back memories of the old days. These moments remind me why I love what I do.

You’re an Ambassador for World Chefs Without Borders. Please tell us a bit about the organisation and your role in it.
World Chefs Without Borders is a global humanitarian initiative established by Worldchefs. Its mission is to support and mobilise a worldwide network of volunteer chefs who provide education, resources and nourishment to communities in need, particularly those affected by food poverty and natural disasters.
These dedicated volunteer chefs engage in a wide range of humanitarian efforts, including operations in relief camps, disaster zones, neighbourhood shelters and mobile kitchens. Their presence brings both practical assistance and hope to areas where urgent food support and care are required.

You also co-founded Qatar Culinary Professionals. What does this organisation do?
Qatar Culinary Professionals (QCP) is a non-profit organisation committed to elevating the culinary arts in Qatar. Affiliated with the World Association of Chefs’ Societies (Worldchefs), QCP focusses on fostering culinary excellence, supporting professional development and promoting Qatar’s rich food culture both nationally and internationally.

Key Activities of QCP:

  • Culinary Competitions:
    QCP organises culinary competitions that allow chefs to showcase their skills, creativity and innovation in a dynamic environment.
  • Professional Development:
    Through workshops, seminars, training sessions and collaborations with industry partners, QCP supports continuous learning and keeps chefs updated on global culinary trends and techniques.
  • International Representation:
    QCP promotes Qatar’s culinary talent and heritage on the global stage, participating in international events and competitions to highlight the nation’s rich food culture.
  • Industry Networking:
    Initiatives like the annual QCP Roadshow serve as networking hubs, connecting chefs, suppliers and culinary enthusiasts. These events foster the exchange of ideas, the introduction of innovative products and discussions on the latest industry developments.

What’s your signature dish at The Diplomatic Club and what, in your view, makes it popular?
The Diplomat Seafood Platter. A signature favourite, The Diplomat Seafood Platter is renowned for its rich variety of premium seafood. This elegant combination features grilled prawns, grilled hamour prepared with a secret house recipe and the famous Lobster Thermidor of Al Sayyad. Cooked à la minute and served piping hot, the dish is accompanied by a medley of sautéed vegetables and classic baked potato wedges, offering a complete and satisfying gourmet experience. ✤
