Named Chef of the Year at the Fact Dining Awards Qatar 2026, Khouder Ghourab, Executive Chef behind Babel Qatar, Ahwet Zeitouna and BeBabel, reflects on the milestone and the career that led him there.

You were recently named Chef of the Year at the FACT Dining Awards Qatar 2026. Looking back on your journey, what does this recognition mean to you, and what do you think has been the biggest factor behind your success?
Receiving the Chef of the Year award is a proud and humbling moment. It reflects years of hard work, dedication and the support of my incredible team. Success in this industry is never achieved alone. I believe consistency, passion, discipline and a commitment to always improving have been the biggest factors behind my journey. This award motivates me to continue raising the standard of Lebanese cuisine on an international level.
When you think back to your childhood in Lebanon, what’s the one food memory that has stayed with you the most, and how does it influence your cooking today?
One of my strongest memories is gathering with my family around a table filled with homemade Lebanese dishes prepared with love. Those moments taught me that food is about bringing people together, not just satisfying hunger. Today, I still cook with that same philosophy, respecting authentic flavours while creating memorable dining experiences.

You’ve been cooking Lebanese food for years. How do you keep finding new ideas without moving too far away from the classics?
For me, innovation begins with respecting tradition. I always keep the authentic flavours and techniques at the heart of every dish, then introduce modern presentation, refined textures or carefully selected ingredients to enhance the experience. My goal is for every guest to recognise the soul of Lebanese cuisine while enjoying something fresh and exciting.
What is your signature dish? How was it developed and what, in your view, makes it stand out?
It’s the Slow-Braised Lamb Shank: a tender, slow-cooked lamb shank served over aromatic Lebanese spiced rice and finished with a selection of toasted mixed nuts. A dish that celebrates tradition, patience and the rich flavours of Levantine cuisine.
