In Conversation With… Zoi Zygelopoulou

The Restaurant Manager of Twisted Olive Doha shares things to try, pride in her team and her favourite Qatar adventures.
We last chatted around two and a half years ago and there have been several developments at Twisted Olive since then. Can you please bring us up to date on what’s been happening over the last couple of years?
A lot has happened at Twisted Olive over the past couple of years, and we’re excited to bring you up to speed.
One of the biggest milestones has been the birth of NAMAA’S GARDEN – a truly unique concept in the heart of West Bay.
Tucked between the city’s iconic skyline and offering a breathtaking sea view, it’s a serene escape that no one saw coming. What began as a bold idea has quickly turned into a landmark, now recognised across the GCC for its charm, ambience and originality.
Meanwhile, Twisted Olive has continued to thrive. We’re proud to say we’ve been awarded the title for the Best Breakfast in Doha several times – and we’ve worked hard to keep it that way.
When it comes to pizza, we don’t just serve it – we stand by it. I can confidently challenge anyone! And if that’s not enough, our unique South African-style barbecue has brought something totally fresh to the scene and has become a favourite among both regulars and first-timers.
To top it all off, our weekends are bringing the energy: Friday evenings come alive with a Cuban vibe, full of rhythm and flavour, while Saturday brunches feature a DJ spinning the perfect soundtrack for a laid-back, vibrant afternoon.
And, having caught up, what can your guests expect over the coming months, any new offers, menu updates or other news you can share?
We’ve got lots of exciting things coming up – some I can share and some surprises I have to keep under wraps for now, But I can tell you this: there are big changes on the way, both to the venue and the menu. So definitely stay tuned – there’s a lot to look forward to!

You’ve previously mentioned the importance of teamwork at Twisted Olive. How do you go about recruiting new team members, what are the qualities you look for to ensure they fit in and how does your management style encourage an uplifting team spirit?
At Twisted Olive, teamwork isn’t just a value – it’s the foundation of our success. I’m proud to say I have the best team in Doha, and I’m very careful when it comes to hiring. For me, it’s not just about experience – it’s about energy, honesty and the desire to grow.
I look for people who genuinely want to work, who are open to learning and who bring a little bit of craziness – the good kind that helps complete the Twisted Olive puzzle.
It’s well known that I’m not your ‘normal’ manager. If you join my team, I will train you, I will push you, I will teach you – and you will become the best at what you do. I’m Greek, which means yes, I talk loudly. But it also means you’ll find a hug and a family away from your own.
My management style is all about building people up. I create an environment where passion is celebrated, effort is recognised and team spirit is everything. When people feel like they belong, they shine – and when they shine, the whole team thrives.
The Twisted Olive menu is extensive. If you had to choose just one item to eat every day, what would it be and why?
Short ribs pizza – try it and you’ll know why.
You’re a veteran of many years in Qatar now. If you have guests come to visit, what are the ‘must see’ things you always recommend they experience?
First on the list is NAMAA’S GARDEN by Twisted Olive – it’s a beautiful spot that represents the diversity and natural essence of Qatar. And after all, that’s my heart and baby.
Next, a must-see is Souq Waqif, where you can truly see and feel the tradition of Qatar. The atmosphere, the scents, the energy – there’s nothing quite like it.
And last, walk along the Corniche, especially at sunset, it always leaves a lasting impression. ✤
