Please tell us about the restaurants you oversee at Aleph Doha Residences, Curio Collection by Hilton.
I have the privilege of curating unique culinary journeys through three exceptional dining outlets.
Firstly, IKA – South American is a vibrant celebration of South American flavours. Here, we take our guests on an adventure through the culinary landscapes of Peru, Argentina, Brazil and beyond, offering dishes such as Árroz con Pato and Cachapas. Each plate is a testament to the rich, bold and authentic flavours of the region, crafted using the freshest ingredients.
The second is WAKA Terrace, an urban retreat located on the ground floor. With its chic outdoor and indoor seating, WAKA Terrace is perfect for a laid-back experience, complemented by an exciting menu. Recently revamped, it now features a new look and a diverse menu.
Lastly, Mondo Café by Lavazza is a haven for coffee lovers with light bites. This café seamlessly blends Lavazza’s Italian coffee mastery with a menu designed to suit any time of the day, whether it’s for a quick business meeting or a leisurely coffee break. It’s a place where guests can savour artisanal brews and delectable pastries, all in an inviting and contemporary setting.
Your hospitality journey didn’t start in the kitchen, what was it about the culinary side of life that first attracted you?
My journey into the culinary world was unplanned but transformative. It all began when I worked as a steward in Mallorca. While my initial role didn’t involve cooking, the kitchen drew me in with its captivating energy. Watching talented chefs transform raw ingredients into dishes that could tell stories and evoke emotions felt like witnessing pure artistry.
What truly inspired me was how food could bridge cultures, create connections and leave lasting impressions on people. Every plate carried the potential to spark joy and create memories. It was this magic – the ability to touch hearts and ignite smiles through flavour – that ignited my passion and pulled me toward the culinary path. To this day, that sense of purpose drives every dish I create, ensuring it’s not just food but an experience.

One of your past experiences was catering to 1,200 guests a night on a Disney cruise ship. This must be a very different experience from hotels. What made you decide to come back to the land-based side of the hospitality business?
Working on a Disney cruise ship was an extraordinary chapter in my career. Catering to 1,200 guests a night demanded precision, teamwork and a deep understanding of efficiency. The pace was relentless and every service felt like orchestrating a culinary performance. It was a masterclass in process optimisation, consistency and high-volume execution.
However, I’ve always been drawn to the personalised touch that hotels allow. Coming back to land-based hospitality meant I could take the lessons I learned – streamlined operations, resource management and delivering excellence at scale – and adapt them to a more intimate setting. It also gave me the opportunity to connect more deeply with guests, curating memorable dining experiences that go beyond a single meal.
The transition back was about combining the best of both worlds: the operational expertise from my time at sea with the warmth and storytelling of hotel dining, ensuring that every plate not only tastes exceptional but also leaves a lasting impression.
What is your signature dish at Aleph Doha Residences? How was it developed and what makes it popular?
At Aleph Doha Residences, my signature dish is the Paella, a culinary masterpiece that captures the essence of my journey as a chef. This dish pays homage to my Spanish roots while embracing the vibrant South American spirit of IKA – South American.
Developing this dish was a labour of love, rooted in tradition but elevated with innovation. I sought to marry the rich, communal appeal of Spanish Paella with bold South American flavours, creating a fusion that resonates with our guests. The dish features premium seafood, saffron-infused rice and a medley of spices that evoke both nostalgia and adventure.
What makes it truly special is the experience it provides – Paella isn’t just a dish; it’s a celebration. Served in a dramatic presentation, it encourages sharing, conversation and connection, turning a meal into an unforgettable event.
