Two talented chefs will come together on September 12 to co-create a Four Hands Dinner in a fresh gourmet concept at The Ritz-Carlton, Doha’s popular French restaurant, Sel & Miel.
Curated to celebrate the abundance of harvest, Chef de Cuisine Maria Paneri and Executive Sous Chef Michele Sciotti have tailormade a select tasting menu that takes guests on a delicious journey through traditional and contemporary European cuisine.
The collaboration offers the rare opportunity to sample the combined efforts of two exceptional chefs where the outcome is a unique fusion of techniques and flavours. Drawing on their European backgrounds, both Maria and Michele are inspired by their respective childhoods and family recipes, creating a fine dining menu that reimagines heritage, evokes nostalgia and embraces innovation. French-inspired styling and live acoustic music has been thoughtfully selected to further enhance the continental ambience.

Offering a six-course gastronomic event, the Four Hands Dinner includes age-old recipes that are deeply personal to each chef, transformed with an elevated, contemporary twist. Rooted in her formative years spent in London, Chef Maria’s Tartare de boeuf is shaped by treasured culinary lessons passed down from a lineage of matriarchs and mentors. Approaching cooking as an act of remembrance, she considers every dish as a memory recaptured, where each step is guided by the voices of those who taught her to love the craft.
Paying homage to his childhood home of Velletri, located outside Rome, Chef Michele’s Spaghetti 9 consistances de tomate is a tribute to his mother’s kitchen, where the humble tomato became the cornerstone of family gatherings. Reinvented with finesse and technical precision, the result transforms this simple ingredient into seven unique expressions, revealing both story and artistry in every bite.
“Sel & Miel has always embodied the charms of conviviality and refined French elegance,” said David Dahlhaus, Executive Chef at The Ritz-Carlton, Doha.
“This collaboration between chefs Maria and Michele represents more than technical mastery, it is a celebration of heritage, passion and the timeless joy of sharing mealtime.”

As the city’s premier choice for excellent French fares, Sel & Miel remains a favoured destination for generations of gastronomes seeking dining experiences that are evocative of a Parisian brasserie. A go-to spot for socialising, the restaurant offers a chic atmosphere, where indoor and outside seating has been styled to encourage lingering conversation.
An exciting first for Sel & Miel, the Four Hands Dinner reflects the restaurant’s commitment to serving cuisine that’s grounded in tradition and guided by innovation. This unique event channels the creativity of two remarkable chefs and promises to be an extraordinary culinary triumph.
