Maison de Haute Pâtisserie is the acclaimed pastry chef’s signature haute pâtisserie Française which promises to demonstrate impeccable craftsmanship, meticulous attention to detail and the finest ingredients.

A visionary in the world of haute pâtisserie, Nicolas Rouzaud has spent more than two decades refining his art, seamlessly blending tradition with modern creativity. Born and raised in France, his passion for baking was sparked by working in the traditional bakeries of Toulouse. Later, his journey to perfect his craft led him to Les Compagnons du Devoir, where he earned his CAP diplomas in pastry, chocolate, confectionary, ice cream and bakery. 

His career took him from intimate pâtisserie kitchens to larger-scale production in Brussels, with his time at Michel Kayser’s two Michelin-starred Alexander in Southern France marking a pivotal moment. This was followed by seven years at Le Bristol Paris, where he rose to First Sous Chef in Pastry, working alongside the renowned Chef Laurent Jeannin and leading a brigade of 19 chefs. 

From The Lanesborough in London to The Connaught, where he launched The Connaught Patisserie, Chef Nicolas has cemented his status as a leading figure in the world of fine pâtisserie.

His next venture debuts at Four Seasons Resort and Residences at The Pearl-Qatar with the brand celebrating the essence of refined simplicity, offering luxurious yet accessible pastries that appeal to those who appreciate high-quality craftsmanship. Through a harmonious blend of sight, taste and fragrance, each creation promises to evoke joy, wonder and nostalgia, inviting guests to escape into a world where beauty and simplicity seamlessly intertwine.

Fruit takes centre stage in each creation, celebrated in its purest form to highlight its natural beauty without excessive sweetness or unnecessary transformation. The selection ranges from the delicate layers of a classic Flan Parisien to the rich indulgence of a Hazelnut Paris-Brest, showcasing Chef Nicolas Rouzaud’s mastery of flavour and texture. 

Guests can also indulge in the pièce de resistance, the Tartelette, a fresh fruit pastry that embodies the essence of each season. Crafted in a custom mould exclusive to the brand, this refined dessert reflects a philosophy of simplicity, precision and indulgence.
